Mushroom Salad Italiano - cooking recipe

Ingredients
    3 Tbsp. fresh lemon juice
    1 clove garlic, finely chopped
    1/4 tsp. salt
    1/8 tsp. freshly ground pepper
    1/3 c. olive oil
    1 lb. fresh white button mushrooms, cleaned and thinly sliced
    2 large stalks celery, thinly sliced
    2 Tbsp. coarsely chopped parsley
    2 oz. fresh Parmesan cheese, shaved with a vegetable grater
Preparation
    To make dressing, combine lemon juice and next 3 ingredients. Beat in oil.
    Reserve.
    Up to 2 hours before serving, toss mushrooms, celery, parsley and cheese with reserved dressing. Serves 6.
