Cream Of Spinach Soup - cooking recipe

Ingredients
    2 (10 oz.) pkg. frozen spinach
    2 Tbsp. chopped onion
    3 Tbsp. butter
    2 1/2 c. milk
    1/2 tsp. salt
    1/4 tsp. nutmeg
    1 c. chicken broth
    3 Tbsp. all-purpose flour
    grated lemon peel (for garnish)
Preparation
    Combine spinach, onion, salt, nutmeg and chicken broth in medium saucepan.
    Cook according to directions for spinach. Puree in blender or food processor.
    Strain, if desired; set aside.
    Melt butter in same pan.
    With wire whisk, stir in flour and cook, stirring constantly, until smooth and bubbly, about 1 minute.
    Slowly blend in milk.
    Bring just to boil.
    Stir in pureed vegetable mixture.
    Garnish with lemon.
