Swiss Vegetable Medley - cooking recipe
Ingredients

1 (16 oz.) bag mixed vegetables (broccoli, carrots and cauliflower combination), thawed and drained (any combination will work)
1 (10 3/4 oz.) can cream of mushroom soup
1 c. shredded Swiss cheese
1/3 c. sour cream
1/4 tsp. ground black pepper
1 (4 oz.) jar chopped pimento, drained (optional)
1 (2.8 oz.) can Durkee French-fried onion rings
Preparation

Combine vegetables, soup, 1/2 cheese, sour cream, pepper, pimento and 1/2 can of onion rings. Pour into a 1-quart casserole. Bake, covered, at 350\u00b0 for 30 minutes. Remove from pan and top with remaining cheese and onion rings. Bake, uncovered, another 5 minutes. (I usually double or triple this for a family of 7 as they all like it so well, and it is good for leftovers. Allow extra time for cooking when doing this.) Serves 6.
