Ingredients

1 lb. peeled potatoes, halved
4 slices bacon
2 medium onions, sliced thinly
1 tsp. salt
black pepper
Preparation

Boil potatoes until tender. Chill. Slice into 1/2-inch slices. In large skillet, cook bacon until crisp. Remove from pan, leaving grease in pan. Add onions to bacon and cook over moderate heat until soft, about 10 minutes. Add potatoes and cook slowly. Add teaspoon of butter, if necessary. Cook until brown, about 20 to 25 minutes.
