Ingredients

2 c. all-purpose flour
1/2 c. sugar, divided usage
4 tsp. baking powder
1 tsp. salt
1 small (5 oz.) can evaporated milk
1/3 c. water
1/4 c. shortening, melted
1 egg
1/4 c. jam (any flavor)
1/2 tsp. ground cinnamon
Preparation

Preheat oven to 400\u00b0.
In medium bowl, combine flour, 1/4 cup sugar, baking powder and salt.
In separate bowl, combine evaporated milk, water, shortening and egg.
Add liquid mixture to flour mixture and mix just until moistened.
Spoon batter into greased muffin tins, filling one-third full.
Drop about 1 teaspoon jam into center of each muffin.
Spoon remaining batter over jam, filling each tin two-thirds full.
Combine remaining 1/4 cup sugar and cinnamon; sprinkle over muffins.
Bake 20 to 25 minutes or until brown.
