Favorite Pumpkin Squares - cooking recipe

Ingredients
    2 c. canned pumpkin
    1 c. sugar
    1 tsp. salt
    1 tsp. ginger
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    1 c. toasted pecans
    1/2 gal. vanilla ice cream, softened
    36 gingersnaps
    whipped cream for garnish (optional)
    18 pecan halves for garnish (optional)
Preparation
    Combine
    pumpkin,
    sugar and spices.
    Add pecans.
    In a chilled
    bowl,
    fold
    pumpkin
    mixture
    into
    ice cream.
    Line bottom of 13
    x 9 x 2-inch pan with half the gingersnaps.
    Top with half
    the ice cream mixture.
    Repeat.\tFreeze until firm, about 5 hours.
    Cut in squares, garnish with whipped cream and pecan halves, if desired.
    Makes 18 servings.
