Ingredients

1 qt. vinegar
1 qt. juice (water beets were cooked in)
1/2 tsp. pepper
1/4 c. whole cloves
3 c. white sugar
2 Tbsp. salt
1 gal. cooked beets
Preparation
-
Bring all ingredients except beets to a boil.
Add cooked beets.
Bring to a boil again and can.
Adding 2 tablespoons lemon juice helps keep beets red.
