Cinnamon-Spiced Ginger Crisps - cooking recipe

2 c. all-purpose flour
sugar
1 egg
3/4 c. softened butter or margarine
1/2 c. dark molasses
1 1/2 tsp. ground ginger
1/2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. nutmeg
Preparation

Preheat oven to 375\u00b0.
Three hours before, mix at low speed all ingredients until moistened, then mix at medium for 2 minutes. Wrap dough in waxed paper, refrigerating for 1 hour.
On lightly floured surface, divide dough into 72 equal pieces.
Roll a piece into ball.
Coat a ball with sugar.
Place 2-inches apart on cookie sheet.
Flatten ball with bottom of a glass to 1/8-inch thick circle.
Sprinkle slightly with sugar.
Bake 8 to 10 minutes until lightly browned around edges.
Cool 2 minutes, then carefully remove to wire racks.
Cool.
Makes 6 dozen.
