Vegetable Pie - cooking recipe

Ingredients
    1 eggplant, sliced
    2 zucchini, sliced
    1 large onion
    2 tomatoes, sliced
    1/4 lb. butter
    1 egg
    1/4 c. Parmesan cheese
    8 oz. Mozzarella cheese, cut in slices
Preparation
    In large frying pan, saute eggplant, zucchini, onion and tomatoes in butter for about 12 minutes or until soft.
    Add egg and Parmesan cheese; mix well.
    Put cooked ingredients into a baking dish (10-inch square) and cover with Mozzarella cheese. Bake in 350\u00b0 oven for 1 hour or until browned and bubbling.
    Let set about 10 minutes before serving.
    Can do ahead.
    Can be frozen.
    Serves 6 to 8.
