Tuna-Rice Capri - cooking recipe

Ingredients
    2 cans (7 oz.) tuna
    1/4 c. chopped onion
    2 c. drained cooked green beans (1 lb. can)
    2 1/4 c. water
    1 tsp. salt
    1/4 tsp. pepper
    1 (10 1/2 oz.) can condensed cream of tomato soup
    1 1/3 c. Minute rice
    2 Tbsp. chopped parsley
Preparation
    Drain tuna, measuring 2 tablespoons of oil into a large skillet.
    Saute onion in oil until tender.
    Remove skillet from heat.
    Add beans, water, seasonings and soup.
    Break up tuna and add to skillet mixture.
    Bring quickly to a boil, then stir in long-grain rice from the box.
    Cover, reduce heat and simmer 8 to 10 minutes or until most of liquid is absorbed, stirring occasionally.
    Serves 4 to 6.
