Rice Pilaf - cooking recipe

Ingredients
    1 c. long grain rice
    1 small onion, finely chopped
    1/2 c. pine nuts or blanched almonds
    1 Tbsp. butter
    2 Tbsp. olive oil
    2 1/2 c. chicken stock
    1/4 tsp. salt (may be omitted)
    2 Tbsp. minced parsley
Preparation
    In medium skillet, lightly brown rice, onion and nuts in butter and oil over moderate heat.
    Stir often to ensure an even color.
    Add stock and salt.
    Cook, covered, over low heat for about 20 minutes, until rice has absorbed liquid.
    Toss with minced parsley.
