Beet Pickles - cooking recipe

Ingredients
    1 gal. beets
    4 c. water
    4 c. sugar
    2 c. vinegar
Preparation
    Wash and cook beets until tender.
    Slip off skins.
    Slice or leave whole as you desire.
    Mix water, sugar and vinegar.
    Bring to a boil.
    Add beets and when heated through, put in jars.
    Cover with the water, sugar and vinegar mixture.
    Seal jars.
    May add spices if you desire.
