Goose Stuffed With Fruit - cooking recipe
Ingredients

1 (6 to 8 lb.) goose
juice of 1 lemon
salt and pepper to taste
butter or margarine
1/4 c. chopped onion
1 c. tart apple, chopped
1 c. chopped, dried apricots
3 c. soft breadcrumbs
1/2 tsp. salt
1/8 tsp. pepper
4 to 6 slices bacon
bacon drippings
Preparation

Sprinkle goose inside and out with lemon juice, salt and pepper.
Melt butter or margarine in a large saucepan.
Add onion and cook until tender.
Stir in apple, apricots, bread crumbs, salt and pepper.
Spoon stuffing lightly into cavity.
Truss bird. Cover breast with bacon slices and cheesecloth soaked in melted bacon drippings.
