2 large cooking apples (yellow Delicious or Granny Smith)
1/4 c. butter
1 c. all-purpose flour
1 c. milk
6 eggs
1 tsp. vanilla
1/2 tsp. salt
1/4 tsp. nutmeg
confectioners sugar
Preparation

Preheat oven to 475\u00b0.
Peel, core and very thinly slice apples. Melt 2 tablespoons butter over medium-low heat in a small frypan. Saute apples until just tender, about 3 minutes.
Keep warm while preparing batter.
Place a 9 or 10-inch cast-iron or ovenproof pan in oven to heat for at least 5 minutes.
The pan has to be very hot.
