Tomato-Watercress Salad - cooking recipe
Ingredients

2 Tbsp. white wine vinegar
1 Tbsp. grainy mustard
1/2 tsp. anchovy paste
1/4 c. plus 1 Tbsp. olive oil
pinch of salt
1/2 tsp. ground pepper
2 bunches watercress
1 large tomato, cut into 1/2-inch dice
Preparation

In a shall bowl, whisk the vinegar, mustard and anchovy paste. Whisk in the oil in a thin stream until incorporated.
Season with the salt and pepper.
Place the watercress in a medium bowl and top with the tomato.
Drizzle the dressing over the salad, toss and serve.
