Seasoned Broiled Pork Chops(Chuletas De Cerdo A La Madrilena) - cooking recipe

freshly ground pepper
4 loin pork chops (1-inch thick)
2 cloves garlic, minced
2 Tbsp. minced parsley
3 Tbsp. minced onion
1 1/2 tsp. paprika
3 Tbsp. olive oil
Preparation

Salt and pepper the chops.
In a small bowl, mix the garlic, parsley, onion, paprika and olive oil.
Heat the broiler.
Grease the pan and arrange the chops.
Spread half of the garlic mixture over the chops and place the pan 4 to 5-inches from the flame. Broil the chops about 5 minutes.
Turn.
Spread with the remaining mixture and broil 5 minutes more or until the chops are cooked through but still juicy.
Serve with mashed potatoes and Molino, a wine from the central region of Spain.
