Old Fashioned Fudge - cooking recipe

Ingredients
    2 c. sugar
    8 Tbsp. cocoa
    pinch of cream of tartar
    pinch of salt
    2/3 c. milk
    3 Tbsp. butter or margarine, divided
    1 tsp. vanilla
    1/2 to 1 c. chopped walnuts or pecans (optional)
Preparation
    In heavy saucepan, stir together first 4 ingredients until well blended.
    Add milk and 2 tablespoons of the butter.
    Cook over medium heat, stirring constantly, until mixture reaches 234\u00b0 on a candy thermometer or forms a soft ball when a spoonful is dropped into ice cold water (soft ball stage).
