Country Corn Muffins - cooking recipe

1 c. sifted flour
1/2 tsp. baking soda
1/4 c. vegetable oil
1/2 c. creamed corn
1 c. cornmeal
1 tsp. salt
2 eggs
2 tsp. baking powder
3 Tbsp. sugar
1 c. milk
1/2 c. raisins (optional)
Preparation

Heat oven to 425\u00b0.
Lightly grease 12-muffin pan. In medium bowl, mix together flour, cornmeal, baking powder, baking soda, salt and sugar.
In another bowl, combine oil, eggs, milk and creamed corn.
Add to flour mixture and stir.
Add raisins.
Pour into pan filling 2/3 full.
Bake about 15 minutes or until golden brown.
