Pecan Delight - cooking recipe
Ingredients

3 egg whites, beaten
1 c. sugar
1/2 tsp. baking powder
1 tsp. cinnamon
1 tsp. vanilla
20 to 25 Ritz crackers
3/4 c. chopped pecans
8 oz. Cool Whip
Preparation

Beat egg whites until stiff.
Mix sugar and baking powder. Pour into egg whites.
Beat until stiff.
Mix cinnamon, pecans and Ritz crackers.
Pour into egg white mixture.
Stir until well mixed.
Add 1 teaspoon vanilla.
Pour into well buttered pie pan. Bake at 350\u00b0 for 30 minutes.
Cool for 30 minutes.
Top with Cool Whip and refrigerate for 1 1/2 to 2 hours before serving.
