Collard Greens - cooking recipe

Ingredients
    1 lb. smoked turkey parts
    1 1/2 qt. water
    3 garlic cloves, minced
    4 lb. fresh collards
    1 medium onion, chopped
    2 celery stalks
    1 small green pepper
    1 Tbsp. sugar
    1 Tbsp. vegetable or olive oil
    salt and pepper to taste
Preparation
    Place turkey in Dutch oven with garlic.
    Add water.
    Cover. Bring to a boil.
    Reduce heat to low and simmer for 30 minutes. Meanwhile, break off and throw away stems of collards.
    Wash leaves thoroughly.
    Slice into small pieces.
    Add collards, onion, celery, green peppers, sugar, oil, salt and pepper.
    Cook 30 to 60 minutes.
    Simmer until done.
