Veracruz Bean Tortillas - cooking recipe

Ingredients
    1 1/4 lb. ground sausage
    1/4 c. chopped onion
    12 oz. refried beans
    12 corn tortillas
    1 c. grated Cheddar cheese
Preparation
    In a 10-inch skillet, cook sausage and onion about 10 minutes or until done.
    Drain off excess fat.
    Add refried beans; stir until hot, about 5 minutes.
    Soften the tortillas in a microwave or on a hot grill.
    Spread each tortilla with 1/4 cup bean and sausage mixture.
    Divide cheese evenly over all tortillas, about 1 rounded tablespoonful each.
    Roll tortillas and place them in a 9 x 13-inch pan.
    Sprinkle with water and cover with foil.
    Place in 250\u00b0 oven until serving.
    Makes 12 servings.
