Caramel Nut Candy(Microwave) - cooking recipe

28 caramels
1/4 c. butter or margarine
2 Tbsp. half & half cream
1 1/2 c. confectioners sugar
1 c. salted peanuts
2 c. miniature marshmallows
1-2 c. flaked coconut
Preparation

Place caramels, butter, and cream in a 2 quart microwave safe dish.
Microwave uncovered on medium for 2 minutes; stir. Microwave 1-3 minutes more, stirring every minute until smooth. Stir in sugar until smooth.
Add peanuts.
Gently fold in marshmallows, sprinkle coconut on a 10x5-inch strip onto 2 sheets of waxed paper; spoon caramel mixture down the center of coconut. Using the waxed paper coat caramel with coconut and roll into 2-10inch logs.
Discard waxed paper.
Wrap logs in plastic wrap and chill for 4 hours.
Remove plastic wrap.
Cut logs into 1/2-inch slices.
Store in air-tight container in the refrigerator.
