Sicilian Meat Loaf - cooking recipe

Ingredients
    2 lb. ground beef
    3/4 c. bread crumbs
    2 eggs, beaten
    1/2 tsp. salt
    1/4 tsp. pepper
    1 garlic clove, minced
    1/2 tsp. oregano
    1 Tbsp. parsley flakes
    1 (4 oz.) can tomato sauce
    8 to 10 slices Cappicolo
    8 oz. Mozzarella cheese, shredded (reserve 3 slices)
Preparation
    Mix eggs, spices and tomato sauce.
    Blend with meat and bread crumbs.
    Flatten mixture on aluminum foil (about 9 x 12-inch). Cover with slices of Cappicolo and shredded cheese.
    Roll tightly like a jellyroll.
    Pinch the ends.
    Cook on a flat sheet pan or a flat pan with low sides. Bake at 350\u00b0 for 1 hour and 15 minutes. The last 5 minutes, place cheese slices on top.
