Salami - cooking recipe

Ingredients
    5 lb. hamburg
    5 tsp. Quick salt
    2 tsp. regular salt
    1 tsp. liquid smoke
    2 1/2 tsp. garlic salt
    2 1/2 tsp. mustard seed
    2 1/2 tsp. ground peppercorns
    1/2 tsp. red pepper (cayenne)
Preparation
    Mix well.
    Knead for 10 minutes.
    Store in refrigerator for 24 hours.
    Knead 10 minutes again.
    Store in refrigerator for 24 hours.
    Shape in 5 or 6 loaves and place on broiler pan.
    Bake 4 hours at 150\u00b0; turn loaves over and bake 4 hours more.
    Will keep up to 3 to 4 weeks in refrigerator.
