Vegetable Rice Mix - cooking recipe

Ingredients
    1 medium carrot, finely chopped
    1/4 c. chopped green pepper
    2 Tbsp. chopped onions
    2 Tbsp. butter or margarine
    1 (4 oz.) can sliced mushrooms, drained
    1 1/2 c. uncooked instant rice
    1 1/4 c. chicken broth
    1/2 tsp. salt
    1/8 tsp. pepper
Preparation
    In a 2 quart casserole, combine the carrot, green pepper, onions and butter; cover.
    Microwave on High for 4 to 8 minutes or until the vegetables are tender, stirring once during cooking time. Makes 4 servings.
