Donna Rustand'S Golden Carrot Bake - cooking recipe

Ingredients
    3 c. shredded carrots
    2 c. cooked rice
    1 1/2 c. shredded process cheese
    1/2 c. milk
    2 beaten eggs
    2 Tbsp. minced onion
    1 tsp. salt
    1/4 tsp. pepper
    1/2 c. shredded process cheese (topping)
Preparation
    Combine first 5 ingredients.
    Stir in onion, salt and pepper. Pour mixture into greased 1 1/2-quart casserole dish.
    Sprinkle remaining 1/2 cup cheese on top.
    Bake in moderate oven (350\u00b0) for 50 to 60 minutes.
    Serves 6 to 8.
