Snowy Apricot Bars - cooking recipe

Ingredients
    1 pkg. (6 oz.) dried apricots
    1/2 c. granulated sugar
    1/2 c. firm margarine
    2 1/2 c. Bisquick mix
    2 c. packed brown sugar
    4 eggs, beaten
    2/3 c. Bisquick baking mix
    1 tsp. vanilla
    1 c. chopped nuts (optional)
    powdered sugar
Preparation
    Place apricots in 2-quart saucepan; add enough water to cover. Heat to boiling; reduce heat.
    Simmer uncovered 10 minutes; drain, chop and reserve.
    Heat oven to 350\u00b0.
    Cut margarine into granulated sugar and 2 1/2 cups baking mix.
    Pat in ungreased jelly roll pan (15 1/2 x 10 1/2 x 1-inches).
    Bake until light brown, about 10 minutes.
    Beat brown sugar and eggs.
    Stir in apricots, 2/3 cup baking mix, then vanilla and nuts.
    Spread over baked layer.
    Bake 30 minutes longer.
    Cool completely; sprinkle with powdered sugar.
    Cut into bars, about 2 x 1 inch.
    Makes 75 cookies.
