Molded Rice And Pea Salad - cooking recipe

Ingredients
    2 c. cooked brown rice
    1 c. cooked peas
    1/2 c. sliced scallions
    1/2 c. sliced radishes
    1/2 c. diced sweet red or green peppers
    1/2 c. chopped cucumber
    1/2 c. olive oil
    3 Tbsp. vinegar
    1 clove garlic, minced
    1/4 c. chopped fresh parsley
Preparation
    Place the rice, peas, scallions, radishes, pepper and cucumber in a large bowl.
    Combine the oil, vinegar, garlic and parsley; stir into the rice mixture.
    Place the salad in a lightly oiled 2-quart mold, loaf pan or other container.
    Pack down lightly and chill for 2 hours.
    Invert on a platter to serve.
    Serves 4 to 6 as a side dish.
