Broccoli And Rice - cooking recipe

Ingredients
    2 c. cooked rice
    2 c. broccoli flowerets or 1 box frozen
    1 c. water
    1 1/2 Tbsp. margarine
    1 1/2 Tbsp. flour
    2 oz. reduced fat Cheddar cheese
    salt and pepper to taste
Preparation
    In medium saucepan, combine broccoli and water.
    Simmer, covered, for about 10 minutes.
    Drain and reserve liquid, adding water if necessary to make 1 cup.
    In small saucepan, melt margarine.
    Blend in flour to form a smooth paste.
    Slowly add the cup of reserved liquid.
    Cook over medium heat, stirring until thickened.
    Add cheese; stir until melted.
    Season as desired. Combine sauce with broccoli and rice.
    Serve as a side dish. Yields 4 servings.
