Ingredients

1/4 c. shortening
1/4 tsp. salt
1 tsp. lemon extract
7/8 c. sugar
1 egg (unbeaten)
1 1/2 c. and 2 Tbsp. flour
2 tsp. baking powder
1/2 c. milk
1/2 c. grated raw coconut
Preparation

Cream in a large bowl the shortening, salt, sugar and egg. Sift dry ingredients, then add to mixture, alternating with milk. Add extract, and stir.
Add coconut, stir lightly, then place in two round, lightly greased cake pans.
Bake in a 350\u00b0 oven for 45 minutes.
