Sweet Potato Pie - cooking recipe

Ingredients
    2 lb. yams
    1/2 c. butter
    1 tsp. cinnamon
    1/4 tsp. ginger
    1/4 tsp. nutmeg
    1/2 tsp. salt
    1 c. brown sugar
    2 Tbsp. white sugar
    3 large eggs, separated
    1/2 c. orange juice
    1 Tbsp. grated orange rind
    1/2 c. evaporated milk
Preparation
    Heat oven to 450\u00b0.
    Boil and mash yams.
    Add butter, spices and sugar to yams.
    Beat until light and smooth.
    Beat egg yolks until light and add.
    Stir in juice, rind and milk.
    Beat egg whites until stiff; fold in.
    Pour into unbaked pie shell.
    Bake at 450\u00b0 for 10 minutes.
    Reduce to 350\u00b0.
    Bake 30 minutes or until pie puffs up and is firm in middle.
    Cool.
