Chicken Bubba - cooking recipe
Ingredients

4 skinless, boneless chicken breast halves
2 Tbsp. olive oil
12 to 14 baby carrots
1/2 lb. mushrooms, sliced
2 chopped green onions
2 cloves garlic, chopped
1/2 c. dry white wine
1 c. chicken broth
1 Tbsp. tomato paste
1 bay leaf, crumbled
1 tsp. dried thyme
2 Tbsp. Dijon mustard
salt and pepper
Preparation

Sprinkle chicken on all sides with salt and pepper.
Brown chicken in oil over medium heat on both sides.
Pour off grease. Add carrots, mushrooms, onions and garlic.
Stir and continue cooking about 3 minutes.
Sprinkle flour evenly over mixture and stir.
Add wine and stir.
Add broth, tomato paste, bay leaf, thyme and mustard; stir.
Cover and simmer 10 minutes.
Uncover and cook for 5 minutes until thickened.
Serve over rice.
