Ingredients

1 1/4 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. apple pie spice
1/8 tsp. baking soda
1 beaten egg
3/4 c. apple juice
2 Tbsp. honey
1 Tbsp. cooking oil
Preparation

In medium mixing bowl, stir together flour, baking powder, salt, apple pie spice and baking soda.
In small bowl, stir together egg, apple juice, honey and oil.
Add all at once to flour mixture, stirring until blended, but still slightly lumpy. Pour about 1/4 cup batter onto a hot, greased griddle.
Cook 2 to 3 minutes, until pancakes have a bubbly surface and slightly dry edges.
Turn and finish cooking.
