Potato Candy - cooking recipe

Ingredients
    1 potato (small, about 1 1/2-inch diameter)
    powdered sugar (should take about 1 lb. but have extra)
    peanut butter
Preparation
    Boil potato until soft (peeled).
    Cool and mash with fork, adding powdered sugar until it has pie crust consistency.
    May get watery when you start, but add sugar and it will get stiff like dough.
    Roll out like pie crust until thin.
    Spread with peanut butter and roll up into long strip (like you would sweet rolls). Cut into pieces about 1/2-inch thick.
