Spinach And Rice - cooking recipe

Ingredients
    2 large onions, finely chopped
    2/3 c. olive oil
    1 small can tomato paste
    2 pkg. frozen spinach, chopped
    1 c. water
    salt and pepper
    2 sprigs fresh mint (optional)
    1/2 c. uncooked white rice
Preparation
    Saute onions in oil until soft.
    Add tomato paste and spinach and stir.
    Add water to cover and bring to boil.
    Add seasonings. Sprinkle rice on top but do not stir.
    Cover and simmer until rice is cooked.
    Makes 4 to 6 servings.
