New England Clam Chowder - cooking recipe

Ingredients
    2 1/2 c. clams, drained (save juice)
    1 large onion, chopped
    3 c. raw diced potatoes
    1 cube salt pork or 3 strips bacon
    3 Tbsp. butter
    4 c. hot milk
    1/2 c. water
    salt and pepper to taste
Preparation
    Saute salt pork or bacon slowly until done.
    Remove from pan. Stir-fry onion in drippings until soft.
    Add potatoes, water, clam juice and salt pork.
    Cover and simmer until potatoes are done. Add clams, milk, butter and salt and pepper.
    Simmer to heat; do not boil.
