Eggplant Cheese Casserole - cooking recipe
Ingredients

3 to 4 eggplant (1/4-inch slices)
1 egg, beaten
2 Tbsp. water
3 Tbsp. oil
1 lb. ground beef
2 round onions, chopped
2 (8 oz.) cans tomato sauce
1/4 tsp. basil
1/4 tsp. oregano
1 tsp. salt
1/8 tsp. pepper
1 clove garlic, chopped
1/2 lb. Mozzarella cheese, sliced
Preparation

Dip eggplant slices in mixture of egg and water.
Saute in oil.
Drain.
Cook beef and onions in remaining oil until onions are golden brown.
Remove fat.
Add tomato sauce and spices. Layer meat sauce, eggplant and cheese in a 2-quart casserole, ending with cheese.
Bake at 350\u00b0 for 40 minutes.
