Rod'S Scalloped Eggplant - cooking recipe

Ingredients
    1 medium eggplant
    3 Tbsp. margarine
    3 Tbsp. flour
    3 tomatoes
    1 c. chopped onion
    1 green pepper
    1 Tbsp. brown sugar
    1/4 tsp. salt
    bread crumbs for topping
Preparation
    Pare and cube eggplant.
    Cook in boiling salted (if desired) water for 10 minutes.
    Drain.
    Melt margarine and add flour; stir until blended.
    Peel and chop tomatoes; add to above mixture. Chop onion and green pepper.
    Add to above mixture along with brown sugar and salt.
    Cook for 5 minutes, stirring constantly. Place eggplant in 2-quart greased baking dish.
    Pour mixture over. Cover with buttered bread crumbs.
    Bake 30 minutes in 350\u00b0 oven.
