Bumpy Pancakes - cooking recipe

Ingredients
    1 large apple, peeled and cored
    1 Tbsp. lemon juice
    3 eggs
    3/4 c. milk
    3 Tbsp. butter, melted
    2 tsp. sugar
    1 tsp. cinnamon
    1 tsp. vanilla
    scant 1/4 tsp. nutmeg
    3 c. bread cubes (5 to 6 slices)
    1/3 c. raisins
    1 1/2 tsp. baking powder
Preparation
    Preheat griddle.
    Finely chop apple.
    Pour lemon juice over apple to prevent browning.
    Beat together eggs, milk, butter, sugar, cinnamon, nutmeg and vanilla.
    Add bread cubes, apple and raisins.
    Stir in baking powder.
    Drop by spoonfuls or 1/4 cup dry measuring cup onto greased and preheated griddle.
    Bake until small bubbles appear; then turn over and bake until golden brown. Makes approximately 1 dozen pancakes.
