Country Cheese Soup - cooking recipe

Ingredients
    1/2 c. minced carrots
    1/2 c. minced celery
    1/3 c. minced green onion
    4 Tbsp. butter
    1/3 c. flour
    2 c. chicken broth
    1 1/2 c. light cream
    1/4 tsp. salt
    pepper to taste
    1 1/2 c. shredded sharp Cheddar cheese
Preparation
    heat large soup pot and add butter.
    When bubbly, add vegetables and saute until soft, not brown.
    Sprinkle flour over them and cook 1 to 2 minutes, stirring constantly.
    Gradually stir in broth and cream.
    Stir until thick and starts to boil.
    Remove from heat.
    Add salt, pepper and cheese.
    Stir until cheese melts. Yields 6 servings.
