Pecan Delight Pie - cooking recipe
Ingredients

4 egg whites, at room temperature
1 c. sugar
1 tsp. baking powder
1/4 tsp. vanilla
2 c. saltine crackers, coarsely broken
3/4 c. pecans, chopped
1 1/2 to 2 c. whipped cream or substitute
1/4 c. pecans, chopped
Preparation

Whip egg whites on medium speed until soft peaks form. Continue on medium speed while gradually adding sugar and baking powder.
Continue whipping until very stiff peaks form and all sugar is dissolved.
Add vanilla and mix thoroughly.
Add saltines and pecans; gently fold in by hand.
Pour into a greased 9-inch pie pan.
Bake at 300\u00b0 for 30 minutes, until center is almost firm. Remove from oven and cool upside down.
When cooled, top with whipping cream and pecans.
