Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant, peeled and cut into cubes
    1 large onion, peeled and chopped
    1 sleeve saltines
    3/4 c. sharp cheese
    1 can mushroom soup, undiluted
Preparation
    Cook eggplant and onion in a small amount of water until tender; drain.
    Crush saltines; add to eggplant and onion mix.
    If you need, you can add more crackers.
    Then stir in cheese and mushroom soup.
    Place in a greased ovenproof dish and bake for 30 to 45 minutes at 325\u00b0.
    You may also sprinkle grated cheese on top.
    Serves 8.
