Ratatouille - cooking recipe
Ingredients

2 Tbsp. olive oil
1 large onion, sliced
2 cloves garlic, minced
1 medium eggplant, peeled and cut into small chunks
3/4 c. green bell pepper slices
2 medium tomatoes, chopped
2 Tbsp. chopped fresh basil or 1 tsp. dried basil
1/2 tsp. salt
1/4 tsp. ground pepper
1 Tbsp. capers
Preparation

Heat oil in skillet. Add the onion and garlic; stir-fry over medium-high heat about 2 minutes. Add the eggplant and stir-fry another 2 minutes. Add the zucchini, green pepper and tomatoes; stir-fry 3 minutes more. Add basil, salt and ground pepper. Cover and simmer 30 minutes over low heat. Uncover; stir gently and simmer 10 minutes. Add capers. Serve hot. Serves 6.
