Fresh Mushroom Soup - cooking recipe
Ingredients

1/4 c. chopped onion
3 Tbsp. butter or margarine
1/2 lb. mushrooms, sliced
2 c. water
2 tsp. beef bouillon granules (or use canned beef broth as part of the water)
1/2 c. whipping cream or half and half
2 tsp. minced parsley
1 Tbsp. cornstarch
Preparation

In medium saucepan over medium heat, saute onion in butter or margarine for 3 minutes.
Add mushrooms and saute 2 minutes longer. Stir in water and bouillon.
Bring to boil.
Reduce heat to low. Cover and simmer 15 minutes.
In small bowl, stir cream and cornstarch.
Stir into mushroom mixture.
Stirring, bring to boil and boil 1 to 2 minutes or until slightly thickened.
Serve in individual bowls and sprinkle with parsley.
Makes 6 (1/2-cup) servings.
