Eggplant Parmesan - cooking recipe

Ingredients
    1 large eggplant
    1 large jar Prego with mushrooms and onions
    8 oz. shredded Mozzarella cheese
    bread crumbs
    egg
    onions
    garlic (gloves)
    salt
    pepper
    olive oil
    Parmesan cheese
Preparation
    Peel and slice eggplant; coat slices in salt and allow to sit for 30 minutes.
    In saucepan heat Prego sauce, adding additional chopped onion and garlic (salt and pepper to taste).
    Allow to simmer while preparing eggplant.
    Rinse salt off eggplant slices. Dip each slice in egg and then in bread crumbs.
    Fry in olive oil until lightly brown.
