Turkey Melt With Potatoes, Peppers And Onions - cooking recipe

Ingredients
    1 lb. medium-size red potatoes
    1 large onion
    1 medium-size red or green pepper
    2 Tbsp. salad oil
    1/2 tsp. salt
    3/4 lb. cooked turkey, cut into 1-inch chunks (2 c.)
    1/4 c. water
    1/4 lb. Swiss cheese, shredded (1 c.)
Preparation
    Cut unpeeled, washed potatoes into 1 1/2-inch pieces, put in a 2-quart saucepan.
    Add enough water to cover.
    Bring to a boil, reduce heat to low; cover and simmer 8 to 10 minutes or until potatoes are almost tender.
    Drain.
