Mandarin Rice Salad - cooking recipe

Ingredients
    4 c. cooked rice (white or wheat)
    1/4 c. oil
    1 c. mandarin oranges (with juice reserved)
    1/2 c. crushed pineapple (with juice reserved)
    1/4 c. fresh or bagged coconut
    1/4 c. frozen peas
Preparation
    In a tube pan, wipe with oil.
    In bowl, mix rice, remaining oil, oranges and pineapple.
    Mix coconut and juice form both fruits; set aside.
    Layer rice mixture, then peas, then rice, then peas. Top with coconut liquid.
    Refrigerate several hours.
    Serve on bed of endive or escarole with shaved purple cabbage to garnish.
