Salmon Croquettes - cooking recipe

Ingredients
    1 Tbsp. finely chopped onions
    1 Tbsp. flour
    1/8 tsp. pepper
    4 Tbsp. fine dry bread crumbs
    1 c. salmon, drained
    4 tsp. margarine
    1/2 c. skim milk
Preparation
    In skillet, saute onion in 2 tablespoons margarine until tender.
    Stir in flour and cook for 1 minute, stirring constantly. Blend in milk.
    Cool slightly.
    Stir in salmon and pepper.
    Add 2 tablespoons bread crumbs; mix thoroughly.
    Shape into patties or logs.
    Roll in remaining crumbs.
    Saute in remaining margarine until evenly browned on all sides.
    Yields 3 servings.
