Pumpkin Maple Pudding - cooking recipe

    1 c. (16 oz.) pumpkin
    1 c. (12 oz.) evaporated skim milk
    3/4 c. maple syrup
    1 egg
    2 egg whites
    1 Tbsp. unbleached all-purpose flour
    2 tsp. ground cinnamon
    1 1/4 tsp. ground ginger
    1/8 tsp. salt
    1/4 c. chopped pecans
