Tarragon Marinated Shrimp - cooking recipe
Ingredients

2 lb. medium shrimp, cooked, shelled and deveined
1/4 c. safflower oil
1/4 c. olive oil
2/3 c. tarragon vinegar
6 Tbsp. black peppercorn
2 Tbsp. minced fresh parsley
1 Tbsp. chopped fresh tarragon leaves
1 white onion, thinly sliced
2 large lemons, thinly sliced
Preparation

Remove tails from shrimp.
Combine shrimp, oils, vinegar, peppercorn, parsley, tarragon, onion and lemon slices in large bowl.
Marinate in refrigerator at least 3 hours, tossing frequently.
